Hoi An's Com Ga: A Vietnamese Variation of Hainanese Chicken Rice
South China Morning Post reports that com ga, found in Hoi An on Vietnam's central coast, shares the tender quality of Hainanese chicken rice but presents a more vibrant combination of flavors.
According to the South China Morning Post, com ga, a dish from Hoi An on Vietnam's central coast, is deeply connected to the history of migrants and possesses distinct tangy flavors. This dish is noted for having the same tenderness as Hainanese chicken rice, which is recognized as a significant Asian comfort food featuring tender, poached chicken and fragrant rice seasoned with chicken stock, often served with dipping sauces of chili, ginger, and soy.
Com ga in Hoi An is characterized by golden rice, shredded chicken with a tangy, herbal element, and a sweet heat provided by a sticky red chili jam, with the rice acting as a warm base for the dish. The traditional preparation method in Hoi An mirrors practices in Singapore, Malaysia, and Thailand: free-range chicken is gently poached in a broth containing ginger and shallots before being taken out and shredded. The liquid from the poaching process is used to cook the rice, which is initially toasted in chicken fat. Furthermore, the rice is frequently prepared using turmeric, which results in its yellow color.
